  • Asparagus

    Oh my gosh…I missed you guys! Yes, I loved being on vacation but I hated feeling disconnected from you. My pictures and videos wouldn’t upload because the wifi in the house was less than stellar. Sooooo I used the time I blocked out in the day for blogging to write you guys posts so there would be plenty now that I’m home. Im currently laid up in bed with the most intense spasm in my neck…we had some insane turbulence flying home yesterday and I was super tense the entire flight.

    Anyway, I feel like you need a recipe and I cant believe I haven’t shared this one with you yet. Before, I get into the cooking let’s talk about why asparagus needs to be in a staple in your diet. According to Eating Well, asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells. I mean HELLO…you need to be eating asparagus. I eat it six ( maybe seven ) days a week. I LOVE IT. Asparagus also has some major detoxing and diuretic effects…what more could you want?

    So what do you need?

    Asparagus (duh )
    Purple onion
    Basting Oil
    himalayan pink salt
    pepper
    Garlic

    Are you ready for the prettiest and most delish dish ever? Okay so chop up your asparagus into equal sized pieces…I like mine about an inch…and throw them in a pan. Next chop up your onion and add in with the asparagus. Drizzle on some basting oil and turn your stove on medium heat. Add your salt and peppa to taste. Stir that bad boy around to mix in all the flavors.

    Have a dance party or catch up on the Real Housewives or read my other posts while occasionally stirring. When you can leave an indent in a few pieces of asparagus you can add your garlic to taste. Keep your masterpiece on the heat for other two-ish minutes. Then you are all set to eat it!!

    I am telling you veggies have never tasted so good! I sometimes have this as an entire meal.

    PS: Yes those super chic pink glasses are onion goggles…yes, I actually wear them and they do in fact work.

  • Balls To the Wall Baked Fudge

    Im about to share with you the recipe for my all time FAVORITE dessert. Confession: I have a major sweet tooth. The way to my heart is definitely through chocolate chip cookies and this killer Baked Fudge. In my opinion, if I want chocolate it is better to go balls to the wall than to settle for a crappy low cal knock off that isn’t going to cure my fix.

    Prepare yourselves.

    I cannot over sell you this mini dish of YUM. One bite and you will be hooked. My dad found this recipe during his Saturday morning ritual of watching the Food Network while walking on the treadmill (strange, I know). We die over pretty much everything The Pioneer Woman makes, but this one is hands down my favorite.

    Baked Fudge has become Dad’d go-to dessert, which is always paired with his homemade ice-cream…but we will save that for another day.

    Are you ready? I don’t think you are. Here is what you need:

    ▪2 whole Eggs

    ▪1 cup Sugar

    ▪2 Tablespoons (heaping) Cocoa

    ▪2 Tablespoons Flour

    ▪1/2 cup Butter, Melted

    ▪1 teaspoon Vanilla Extract

    Got that? Okay now here is all you need to do:

    Preheat oven to 300 to 325 degrees.

    Beat eggs until light in color. Beat in sugar until just combined. Add cocoa, flour, melted butter, and vanilla extract. Mix gently until well combined.

    Pour batter into four large ramekins or one 8-inch square baking dish. Set ramekins or pan into a larger pan halfway full of water.

    Bake 40 to 50 minutes, or until upper crust is crispy and the rest of the batter is firm but not set. Toothpick should come out…not clean, but mixture should not be overly runny. If you pull it out of the oven and have second thoughts, stick it back in for ten more minutes.

    You need to try this ASAP. Also if you have no idea who The Pioneer Woman is jump on to Amazon Prime and order all of her cook books. She is adorable and has KILLER recipes.

  • Calories: Why they DONT Matter

    Happy Monday! Is it weird that I like Mondays? It feels like a fresh start you know? There is a lot happening this week blog and life wise. Im pumped. I got fresh highlights this weekend and I have a lash refill on Wednesday so you know it is going to be a good week. Anyyyy way let’s get into it shall we?

    I want to dive head first into one of my FAVORITE things to talk about, diet. More specifically calories and why they don’t matter.

    Yes that was a bold statement. I don’t believe in looking at calories. Crazy right? Hear me out. Every fad diet and women’s magazine has brainwashed us in to believing low calorie is the way to go when trying to lose weight and become healthy. In theory it sounds like a good idea… eat less, weigh less. I have tried those fad diets: low carb, no fat, no fun. Yes I dropped weight but I wasn’t any healthier. I was miserable because I was hungry. These diets have you restrict yourself or even worse cut out an entire food group which is why they don’t work longterm. In order to function your body needs carbs, veggies, fats and protein. (Veggies are in the carb family but they are sooooo important I give there own group.)

    So what are calories? A unit of measurement. Calories are the amount of energy that a food//drink will give you. So it makes sense why we feel so tired, sluggish and dare I say bitchy when we are restricting ourselves. When you listen to your body and eat 80% unprocessed foods and you have an active lifestyle there is no need for counting calories.

    If you are eating a high number of calories (that are processed and full of nasty chemicals) and you don’t use that energy it is then stored as fat. Why? Because back in the day when we were hunting and gathering we held on to those extra calories because we didn’t know when we would get our next major meal or when we were going to have to run from a lion. It makes sense right?

    If you are eating 80% unprocessed and all natural food you will look and more importantly feel so much better.

    When I changed the way I looked at food labels, I changed the way I felt about food. I used to look only at the calories and not at the ingredients. If it was over 200 calories I wouldn’t eat it. I looked for packages that said ‘Low Fat’ and ‘100 Calories Per Serving’ in bright bold font. What those labels don’t say is ‘Full of Chemicals’ and ‘No Nutritional Value’.  I couldn’t tell you the last time I looked at the calorie count in any of my foods, my eyes go right to the ingredients. If I see that the ingredients are all natural, chemical free and REAL that is all I care about. If I don’t know what an ingredient is I google it. I want to know what I am putting in my body. Who cares if the calories are higher is the food is better quality?

    If I am being honest, most of my food doesn’t have a label. I usually fill up my cart with veggies, leafy greens and a variety of fruits. Then I get meat, I alway organic ground turkey and chicken. Those things make up 80% if not more of my diet. Add in some brown rice, quinoa chips and a few freshly baked organic chocolate chip cookies and I’m set for the week.

    My FAVORITE example when talking about my view on calories is soda. Diet soda is zero calories. My smoothies are up to 200 calories. It is a no brainer which one you should be drinking but someone who is calorie counting may be naturally drawn to the wrong choice. When it comes to making the healthiest choice the ingredients always come before the number of calories. Food is fuel and the higher quality the better. Always try to think about what you eat and how it is impacting your body.

  • The World’s Best Balsamic Dressing EVER.

    I am so so so excited for this post. I’m telling you once you taste this dressing you will never think of salads the same.

    This is my cousin Laurie’s recipe and it is to DIE for. I tasted it for the first time on New Years Eve and I haven’t used a store bought dressing since. No other dressing compares. It is light, full of flavor and only takes 2 minutes to make… what more could you ask for?

    Let’s get into it. Here is what you need:

    1/2 cup extra virgin olive oil

    1/4 cup balsamic vinegar

    2-3 garlic cloves chopped

    1 tsp. Dijon mustard

    black pepper

    dried basil

    dried oregano

    Mix all the ingredients in a bowl and whisk together. Add pepper, basil and oregano to taste.

    Yes it is that easy. Yes it will turn any boring salad into the best you have ever had…try it and tell me what you think!!
