  • Gluten-Free French Toast

    Gluten-Free French Toast

You guys…without exaggerating this is the best dang french toast. Like ever. Your boyfriend won’t even be able to tell the difference.

This bread is hands down the best gluten-free bread I have ever had… and I have tried them all. It’s hard to take something as magical as bread and make it taste good without the gluten but La Brea Bakery based out of San Leandro California freaking nailed it. I found it at Wegmans but look here to find a store near you that carries it.

    Sprint don’t walk.

This morning I didn’t have anywhere pressing to be while my St Moriz tan developed. I wanted breakfast…like syrup and carbs. I love a french toast moment but the whole ‘gets a rash from gluten thing’ really dampens the carb party sometimes.

Enter La Brea. Hello, happiness because WOW.

I mixed a little almond milk, two eggs + a splash of vanilla extract in a chic pink bowl. Drenched the gluten-free bread in the mixture, popped those babies on the stovetop and boom… best breakfast ever.

It took ten minutes including the food photoshoot. The phone eats first you know?

Make good choices. Look both ways.

    I love you the most,

    Katie

  • Pilates Has Gotten Me Out of Bed for Seven Years

Pilates Has Gotten Me Out of Bed for Seven Years

Seven years ago, Pilates saved me from the darkest moments of my life. I was 19 and so dang sick. After years of blissfully sitting in the passenger seat of my own life, Pilates gave me my power back. It strengthened my knees and healed my soul. All those years ago, Pilates was my only reason for getting out of bed.

    I was in pain.

    I was mentally weak.

    I was emotionally broken.

My life at the time was difficult. I rarely take myself back to those days because quite frankly, I blocked those hard years out…the years I let arthritis + lupus have control. I played the passive victim. Things very much happened to me… not for me.

Then one day, I woke up wanting and needing more. I was a stay-at-home daughter…my only job was to heal my body from a neurotoxic adverse reaction to a medication.

That’s the day I found Pilates.

I could lay down. My joints didn’t hurt. I was out of bed. I was meeting people. I was laughing.

Six months after practicing Pilates, I signed up for the 500-hour certification that would alter the course of my life. (I’m forever thankful to the studio owner who saw my potential)

Pilates is the reason you are reading this.

Pilates, to this day, is still the reason I get out of bed in the morning.

Pilates is about connections. Connection to the mind. Body. Spirit. It’s where I connect to you.

Now seven years later as the instructor, Pilates allows me to read you, to scan your body. I know everything about you in the first 15 minutes of class. The way your feet turn in on the footbar. The way your hips are a quarter of an inch out of alignment. The way your face changes when you stop using your abs and move into your neck on the 100.

    I see it.

I feel your energy. I use your energy to my advantage. I pull from your humor, your hard day, your untapped strength.

Some days I’m going to push you. I’m going to take you so far out of your comfort zone you forget there is a world beyond the four walls of the studio. Moving meditation. Class will be the fastest, most fun and freeing fifty minutes of the day.

Other days I’m seeing you need a recovery. A slow and stretchy flow. You need a feel-good story, a soft playlist, and the classical order.

It is my job to create connections. I want you to connect with your breath. I will ask you to connect your mind to the muscle we are working on. I want you to connect with me, the person next to you and the friendly smile at the other end of the room.

My job is through these connections to create a community. I hope when you leave my class you know the people in the room are cheering you on. I hope you leave with five new friends, myself included.

I create an unfiltered environment, a space to vent or share or brag. Let us help you through your struggles and celebrate your milestones.

There is something magical that happens the second we lay down on the reformer and let go. We exhale and release the day.

I can tell you, I have never laughed harder or smiled bigger than I do in that room with my girls. People I didn’t know existed a little over a year ago are my first thought in the morning.

I think about their healing back injury and their daughter’s first day of kindergarten and how their new puppy is sleeping through the night.

They have become my peace. The girls, my clients turned friends, have given so much more than they will ever know. They allow me to be authentic, unfiltered and unapologetic.

Pilates is the single greatest gift I have been given in life.

Make good choices. Look both ways.

    I love you the most,

    Katie

  • The Pilates Blonde

    The Pilates Blonde

The Pilates Blonde is my idol. She is carefree, confident, fun and the most electric // zesty person in every room. She is kind and gentle yet forceful. She is poised and firm.

When you picture her she is strength wrapped in a smile.

The Pilates Blonde inspires the world to do better, be better and love harder.

She inspires fun. She proves you can be the hardest working person in the room while having the most fun.

You can wear the warmest smile and the most positive outlook.

You can be both serious and silly simultaneously. Together they are powerful.

She knows it is possible to carve your own path. The road untravelled…or better yet unpaved is often the one with the most rewards.

She shows you what it’s like to live unapologetically and that It is possible to embrace + acknowledge your flaws but to love them. Amor Fati.

She is here to prove there is love in the struggle. In fact, the bigger the struggle the bigger the love. You don’t fight for what you feel is worthless.

The Pilates Blonde also encourages you to abandon what isn’t for you, because you know your worth without a doubt.

She picks you up and pushes you into your potential.

For you, I hope she is everything she is for me.

She is the friend + mentor I needed at my lowest points. She is the voice in my head and the burning in the pit of my stomach telling me to leave my comfort zone.

She’s the extra mile. The last rep. The first phone call I wanted to when my world is shattering.

She is the unwavering strength. She is endless opportunities.

Every morning, I strive to be a little more like her. Every morning I check in with her, this ideal version of myself, the person I hope to be one day… to see if I’m one step closer.

How would she deal with that conflict or conversation or celebration of self?

I allow this version of myself to hold me accountable. She helps me break down barriers because in her world they don’t exist.

    I don’t always show up as her… some times I’m tired. I’m stressed. I’m overwhelmed. I’m hungry.

Even when I’m all of those things… when I’m my own worst enemy, she is my support.

I hope she is everything for you in the way she is for me.
